Go Green On National Kale Day!

Kale, the hot hipster veggie of 2014. October 1st marks the holiday for this favorite green. To celebrate, here is a delicious recipe, courtesy of “Skinny Chef” Jennifer Iserloh and best-selling author of 50 Shades of Kale and Healthy Cheats, among other books. For more recipes visit:

Caramelized Onions and Apples with Kale

Serves 4

What You Need:

1 tablespoon olive oil
1 red onion, thinly sliced
1 apple, skin on, cored, cubed
6 cups thinly sliced kale, any variety
1/2 teaspoon salt
1 tablespoons honey

What To Do:

Place the olive oil in a large skillet over medium heat. Add the onion, apple, and salt. Cook 1 minute, stirring often. Add the honey and lower the heat to low, cook 3 to 4 minutes stirring often until the onions and apples are golden. Add the kale and lower the heat to low. Cover and cook 2 more minutes, stirring occasionally until the kale is soft. Serve immediately.

Nutritional Stats Per Serving (about 1 cup): 131 calories, 3 g protein, 23 g carbohydrates, 4 g fat (0 g saturated), 0 mg cholesterol, 3 g fiber, 335 mg sodium.
