CHOCOLATE TRUFFLE COOKIES (Vegan)

What You Need:

(makes ~16 cookies)

  • 1 cup Almond Flour
  • ½ cup Cocoa Powder
  • 1 tsp Baking Powder
  • ¼ tsp Himalayan Salt
  • ½ cup Vegan Butter (melted)
  • ¾ cup Unrefined Date Sugar
  • ¼ cup Almond Milk
  • 1 tsp Pure Vanilla Extract
  • ½ cup Vegan Chocolate Chips
  • 1 Tablespoon Organic Coconut Condensed Milk
  • Hemp seeds or crushed nuts of your choice
  • Honey or Melted Caramel

What To Do: 

Preheat oven to 350°F.

  1. Whisk flour, cocoa, baking powder, salt.
  2. In another bowl, mix melted vegan butter, date sugar, almond milk, condensed coconut milk + vanilla.
  3. Add dry mixture to wet; fold until fully combined.
  4. Fold in chocolate chips.
  5. Drop heaping tablespoons onto a parchment-lined tray.
  6. Bake 9–11 min (they should look soft—cookies firm as they cool).

*Lightly drizzle the cookies with honey or caramel. Sprinkle hemp seeds or your choice of crushed nuts for a delicious crunch!
